Let’s explore ways to enjoy cooking with wine. And how to pair wine with what you serve. As you know, wine is the magic ingredient for so many recipes and even can be the magic ingredient to turn grocery store purchased items into something much greater. Beef stew transformed with red wine

That glorious meat stock didn’t just come from the meat! After browning the meat, we deglazed the brown scrapings on the bottom of the pot by pouring in a good cup of red wine. That gets all those glorious brown scrapings to be a part of the stew. Then we let the wine deepen the flavor of the sauce as the stew gently simmers. Add some tomato paste, and a touch of sugar if you feel like it, add some herbs, and WOW. You have a rich, wine-based dish your guests will love and rave about.

So many of us love pulled pork. Have you tried it with wine? You’ll want a spicy red, a zinfandel or something full bodied of your choice. When you put the pork shoulder in the pan, add a cup of the wine as well as a cup of water plus the normal veggies and herbs you use. Add more wine as needed during that long slow cooking. And assuming you are making a sauce, add the rest of the red wine to the sauce that is going to coat that lovely pulled pork.

Making mid-week spaghetti?  Add a half cup of red wine to the store bought marinara for greater depth and home-made taste. 

Or how about a simple and quick chicken piccata  with a dry white wine that you can use in the dish and drink: 

Chicken Piccata

Simply pound some chicken tenders until they are uniformly thin and flat, dredge them in a little flour, and saute them in olive oil.  ( I use lemon olive oil, but regular is fine.) 

When the chicken is done,  set it on a plate in a warm oven while you make the sauce. 

And add a half cup of Sauvignon Blanc or Pinot Grigio and use it to scrape all that delicious browning from the chicken. 

Add in a cup of chicken broth and the juice of a half lemon.  In a mixing cup, mix together a teaspoon of cornstarch with a half cup of wine or broth until the starch is dissolved and add it to the sauce.  Stir in a handful of parsley – so good for us – and some thin lemon slices.

If you have capers on hand, mix some in. 

Serve with pasta or rice.  It is a glamorous easy meal, and a way to show the value of cooking with good wine!   BTW, you can substitute shrimp for the chicken if you are going all out on a party meal.  Increase the amount of wine to balance out the richness of the shrimp.
