Protein Popcorn Bars

One of the great ways to use our Protein Popcorn is to make super-simple protein popcorn bars.  You can make these in about ten minutes, and you know your kids can make them quickly too. And saving you time as you are planning for their lunches.  And, withProtein Popcorn you’ll be sure that those snacks are good for them with wonderful protein value.

Here’s a basic recipe that you can modify:

In a medium pot, mix together ¼ cup sugar with 1/3 cup of honey and 1 teaspoon of vanilla.  Cook over moderately low heat until the mixture becomes caramelized and thick.  (You want it thick to hold everything together.)  Use baking parchment to line baking tin or bread/loaf pan. Slightly crush the Protein Popcorn and fill the pan to about half full. 

Mix in your choice of a Tablespoon of chai seeds or other seeds, and 1/3 cup sliced almonds.  (You can use other nuts – pecans, walnuts, etc.) Pour the caramelized liquid over the Protein Popcorn and nut combination and use a spatula to smooth it out and be sure everything is coated and sticking together.  Let cool a bit and cut into bars before it becomes hard.  Voila!  An easy way to keep that protein in the lunch box.  Modifications:  You can use different flavorings other than vanilla or together with vanilla.  I like to add some almond flavor, or even maple flavor – great with pecans.  Lots of variations and lots of fun in the kitchen with Protein Popcorn for you and your family.
